A visit to Jaipur dairy Plant was organized for M Sc Home science (Foods and Nutrition) Sem I as a part of their syllabi. They visited the plant on 4th october 2017 escorted by a faculty member.
Jaipur dairy is aiming to market all kinds of world class dairy products to ever increasing potential customers of Rajasthan primarily, through its chain of outlets. Currently, it markets milk in poly-pack – toned, double toned, standardized and full cream milk in bulk, tetra pack milk, Ghee, paneer, Dahi, Chhach, Lassi and flavored milk in suitable consumer packs under brand name Saras.
The students have visited the unloading section of milk, the pasteurization unit, packaging unit of milk, butter section, ghee section, paneer section, flavoured milk section and tetra pack. The students have also visited all the sections where processing and packaging of various milk products was done. The step- in refrigerator used for storing ice creams was also visited. Ice cream was not manufactured there; it was manufactured by Vadilal but under the label of Saras. The aseptic packaging plant of milk and the quality control laboratory of tetra pack was also seen. We have also visited the HACCP unit where the preparation of flavoured milk and paneer takes place.
As soon as the milk is collected it is tested for fat content and on that basis the payment for milk is being made to the vendors. On special request, we have also visited the quality control laboratory, where the microbiological (SPC and Total Coliform Count and MBRT) and nutritional analysis (proximate principles, SF, TS, Lactose etc. by MILKOSCAN) was done. They test fat content and sodium content on daily basis. Iodine number and RM value of milk is also tested on daily basis.
Overall, it was a very fruitful and knowledgeable visit.
