A visit to the Jaipur Dairy was planned as a part of course curriculum of M.Sc. students on 7.11.16. We reached the plant at 10:30a.m. In a well organised way we were taken inside the plant. First we saw the procurement area where milk was collected and sent for initial testing. Once the sample of milk was approved, it was stored in silos under insulated conditions. Then we were shown the milk packaging area where milk was being processed and packed according to their fat content in orange, yellow and green packets of 0.5kg, 1kg and 6kg. Then we were taken to the butter and ghee making area. There we saw the separation of cream from milk, production of ghee and butter and finally their packaging. Then we were shown the curd making section.
The students were made to assemble in the garden for their queries and history of the plant. They were made to taste ice creams. Quality and sanitation standards were briefed there. The method of milk collection, testing at the village level, the cooperative, their grants and similar information was provided here. The cleaning of all the equipments was done twice daily for complete sanitation.
They have a walk-in refrigerated area for ice creams. From here only we were shown the water heating and cooling systems which supplied hot and cold water to the whole plant. Then we went to the paneer section. It was the only area where humans touched the products, rest the whole plant was automatic. Then we were shown the storage area of milk powder. The excess milk during winters was dehydrated into powdered milk and stored for usage during days of demand. Then we went inside the quality laboratory where all the analysis was done. We also saw the insulated trucks which were being used for transportation purpose.
It was a very learning experience for all of us. The students gained practical knowledge.
