Mr P N Raju, Food Technologist, NDRI, Karnal. His topic of presentation was “How Aseptic Processing and Packaging is integral to Food safety?” He focussed on Aseptic processing and packaging : An integral system to Food Safety. India is the leading producer of milk. Milk is the ideal medium for the growth of microbes so it needs to be packaged well.He focussed on different methods of thermal processing of milk like HTST and UHT. HTST can kill Bacterias’ like Mycobacterium tuberculosis and Coxiellaburnetti. HTST milk has a shelf life of 1week under refrigerator. Then he talked about Aseptic Packaging, Ultra High Temperature can even kill the spores of bacterias.
Sterilization of packaging material is done by life stream and hydrogen peroxide. Homogenization of milk is being done before aseptic packaging. UHT milk is whiter and has a developed flavour. Its viscosity is also increased. Tetra packs are 100% recyclable. It contains 6 layers like Plastic, paper board, polyethylene, aluminium and at the end 2layers of polyethylene.
UHT milk can be used during travelling, it can be used for infant feeding also as it is free from microbes.
Then there was a Quiz round in which questions related to presentations were asked and out of 10, 7 prizes were won by our students.
