Attended CNE ‘Nutrimeet 2013’ on Milk Consumption: Effect on nutrient status and Risk of Chronic Disease - How aseptic processing and packaging is integral to food safety

Report of ‘Nutrimeet 2013’

Students of M.Sc Home Science Foods and Nutrition (both previous and final year) have attended a symposium “Nutrimeet 2013 continuing Nutrition Education Series” organized by  at Indian dietetic Association Jaipur Chapter and Tetra Packaging Group at Hotel Royal Orchid, Jaipur.

Ms SwapnaChaturvedi, Senior Dietician, AIIMS and Joint secretary, IDA Delhi Chapter. Her topic of presentation was “Milk Consumption: Effects on Nutrient Status and Risk of Chronic Diseases”. Intake of milk and milk products reduces the risk of cardiovascular diseases. India is now known as the Diabetic capital of the world. Sixty percent of the people tend to be diabetic in India. Dairy products improve bone health in women. 80% of Vitamin D is lost during boiling and other water soluble vitamin like B1, B2, B6 and B12 are also lost during boiling. She has also focussed on the role of calcium in improving the bone health. She said that peaknbone mass is attained only by the age of 30-35 years in females. Consumption of dairy products can improve bone health in women.

Mr P N Raju, Food Technologist, NDRI, Karnal. His topic of presentation was “How Aseptic Processing and Packaging is integral to Food safety?” He focussed on Aseptic processing and packaging : An integral system to Food Safety. India is the leading producer of milk. Milk is the ideal medium for the growth of microbes so it needs to be packaged well.He focussed on different methods of thermal processing of milk like HTST and UHT. HTST can kill Bacterias’ like Mycobacterium tuberculosis and Coxiellaburnetti.  HTST milk has a shelf life of 1week under refrigerator.  Then he talked about Aseptic Packaging, Ultra High Temperature can even kill the spores of bacterias.

Sterilization of packaging material is done by life stream and hydrogen peroxide. Homogenization of milk is being done before aseptic packaging. UHT milk is whiter and has a developed flavour. Its viscosity is also increased. Tetra packs are 100% recyclable. It contains 6 layers like Plastic, paper board, polyethylene, aluminium and at the end 2layers of polyethylene.

UHT milk can be used during travelling, it can be used for infant feeding also as it is free from microbes.

Then there was a Quiz round in which questions related to presentations were asked and out of 10, 7 prizes were won by our students.
