Two day National Conference

on

‘Advances in Food Science, Processing and Technology’

Sponsored by ICSSR

 

The Department of Home Science, IIS (deemed to be University), Jaipur had organized a two-day National Conference on 13th and 14thMarch 2020, on ‘Advances in Food Science, Processing and Technology’ sponsored by ICSSR, New Delhi. The aim of the conference was to highlight the latest trends in food Science and processing and the importance of food safety as a shared responsibility of the government, retailers and consumers. The main focus of the conference was to provide a forum or platform for discussions on emerging ideas and technical know –how in the field of food science, processing as well as safety standards towards meeting the need of a growing population.

 

Day-1

Inaugural Session

 

The conference commenced on 13th March, 2020 at 10:00am with theInaugural Session, seeking the blessings of the Almighty in the form of Saraswati Vandana. This was followed by lightning of the lamp by the dignitaries on the dais – keynote speakerProf. N. Venkatachalapathy, Head, Department of Food Engineering, IndianInstitute of Food Processing and Technology,

 

 

 

 

 

 

Thanjavur, Tamil Nadu, Honourable Vice Chancellor, IIS (deemed to be University), Dr Ashok Gupta, Rector and Registrar, IIS (deemed to be University), Dr Raakhi Gupta, Dean , Faculty of Science, Prof. Pradeep Bhatnagar, Conference Convenor Prof. Ila Joshi and Organizing Secretary Dr Gargi Saxena.

 

 

This ceremony was followed by the Presidential and welcome address by the conference chairperson Dr. Ashok Gupta, Vice-Chancellor, IIS (deemed to be University), Jaipur. He extended a warm welcome to the resource persons and delegates who braved the scare of corona virus and came to attend the conference from all around the country.Prof. Pradeep Bhatnagar,

 

 

 

conference Counsellor, then acquainted the delegates with the purpose of the conference. This was followed by the release of the book of abstracts by the keynote speaker Prof. N. Venkatachalapathy. In his inaugural remark, the keynote speaker called all the delegates as brave hearts for fighting the Corona virus and coming to attend the conference. He talked about how India was dependent on foreign countries for food some 50 years back whereas today India not only produces food but exports it as well! He threw light on the latest trends in food processing to make food available to all throughout the year.  He concluded his talk by motivating the students and young scientists to opt for start- ups and become employers instead of job seekers.

 

 

 

The inaugural session ended with a formal vote of thanks by conference convenor Prof. Ila Joshi.

The inaugural session was followed by the Keynote Session.

Prof. N. Venkatachalapathy delivered the keynote address on the theme of the conference. He talked about the leadingcause of the development of processed foods. He emphasised that new

consumer satisfaction technologies are required to mitigate hunger so as to fight against malnutrition. His talk also covered various types of Ready to eat foods available in today’s market, various processing methods employed to improve the shelf life of the products. He ended his talk with the message“Eat Right, select good processed foods that are nutritious.”

Technical session I

This session was chaired by Prof. Pradeep Bhatnagar, Dean, Faculty of Science, IIS (deemed to be University), Jaipur.  The invited speakers of this session were Prof. V.H.Patel, Head, Department of Foods and Nutrition, Sadar Patel University, Anand, Gujarat and Prof. Mamta Tiwari, Director, Prioritization, Monitoring & Evaluation and Associate Director, Extension at Agriculture University, Kota.

Prof. V.H.Patel, delivered a talk on “Nutrigenomics: An Interdisciplinary approach towards healthy life”. He started by explaining that Nutrition + genetics= nutrigenomics. He said that,

 

Genetic material differs with person to person. Therefore, personalized nutrition, custom made for one's genes is needed.

Prof. Mamta Tiwari gave a talk on “Entrepreneurship through Agro Processing and value addition” wherein she highlighted the importance of providing jobs to poor farmers through skill

development trainings and entrepreneurship ventures.

Technical session II

Technical session II was chaired by Dr Madhu Bala Singh, Scientist ‘G’ , ICMR, DMRC, Jodhpur.  In this session, two invited speakers Prof. P. K. Nema, Department of Food Engineering, NIFTEM, Sonepat and Ms. Shakun Sharma, Senior Project Associate, Food Fortification Programme – GAIN, New Delhi delivered their talks.

Prof. P. K. Nema spoke on “Superheated steam drying for better retention of nutrients in the processed food products”. In his talk, he has discussed about the need of drying food commodities and various methods employed in drying of the food for better retention of nutrients and better shelf life. He has focussed on Hybrid drying method, a upcoming technique and the technology of SSD ie. superheated steam drying along with its advantages and disadvantages.

Ms. Shakun Sharma from GAIN talk about “Food Fortification: Enriching Foods, Enriching lives”. She has thrown light on importance of food fortification. She has shared the latest data on prevalence of malnutrition, anaemia and other micro nutrient deficiencies prevailing in India. Ms. Sharma also discussed the technique of fortification of salt, flour and oil and about the logo of fortification.

Day 2

On the second day, the conference commenced at 9:00 am with poster presentations by young scientists. The posters were judged Dr P. N. Kalla, Dean, Faculty of Science, Jagannath University, Jaipur and Dr Charu Jhamaria, Associate Professor, Department of Environmental Sciences, IIS (deemed to be University), Jaipur.

 

Technical session III started at 10:30 am on day 2. Session was chaired by Prof Beena Mathur, Retired from Department of Home Science, University of Rajasthan, Jaipur. The speakers of this

 

 

 

 

session were Dr Madhu Bala Singh, Scientist ‘G’, ICMR, DMRC, Jodhpur   and Mr. Anshuman Jain, packaging consultant, Mindbox Packaging Solutions, Jaipur.

Dr Madhu Bala Singh delivered her talk on “Role of pearl millets and its products in

improving nutritional outcomes”. She stressed on the importance of pearl millet for iron retention, zinc retention and prevention of anemia.

Mr. Anshuman Jain talked on “Food Packaging”. He emphasised on variety of packaging

 

 

materials available, importance of biodegradable packaging, threat of plastic disposal and the latest trends in food packaging. He has also focussed on how packaging is done and content

specific packaging.

Technical session III, was followed by 10 oral presentations. Total 16 presentations were given by young budding scientists.

 

This session was followed by Lunch.

The last session was Technical session IV, which emphasised specifically on Food Safety. This session was chaired by Dr Mukta Agrawal, Associate Professor & Head, Department of Home Science, University of Rajasthan, Jaipur. The speakers of this session were Mr Rahul Mathur,

Academic Head & HOD, Front office, Ananta Institute of Hotel Management, Jaipur and Mohd.

Mr Rahul Mathur delivered his talk on “Food Risk Analysis”. He has covered all the three aspects of Food risk analysis ie. Risk assessment, risk management and risk communication along with Hazard Analysis Critical Control Points, a very important parameter in maintaining

Food Safety. He concluded his talk by saying, “Food safety affects us all, and in our daily lives

we naturally want to avoid food that puts our health at risk”.

Mr Mohd. Shahid talked about “Food Safety and Management System”. He has focussed on the regulatory authorities of the Government, basically the rules and regulations laid down by FSSAI to be followed by each food industry.

The conference concluded with a valedictory session where awards and certificates were  distributed to the winners of oral and poster presentations. The awards were given only to the

 

 

student category. Tanushree Chakraborthy has won the first prize and Sunidhi Mishra From MPUAT, Udaipur has won second prize in oral presentation. Under poster presentations, awards were given in 2 categories – research & review. In Review category of poster presentation, Neelam Rathod from MSU, Baroda  stood First, Followed by Priyal Vijay from IIS (deemed to be University), Jaipur. Two awards for appreciation were also given to Bhanushree Bagh & Tejinder Kaur. In the research category, Ms. Anjana Singh from IIS (deemed to be University), Jaipur has won the first prize & the runner up was Shikha Sehgal from IIS (deemed to be University), Jaipur. In this category also, two appreciation awards were aged by Ms. Neelakshi Tanima from SKRAU, Bikaner and Sameeksha Sharma from (deemed to be University), Jaipur. Impressions of the conference were given by two faculty members – Ms. Swetha Rani Rai from J.D. Birla Institute, Kolkata ad Dr Ramesh V. from College of Dairy Science and food Technology, Dantiwada, Gujarat. Lastly formal vote of thanks was given by Dr Nalini Totuka, Additional Head, Dept. of Home Science, IIS (deemed to be University), Jaipur.
